The Manufacturing Process

Marianne’s production processes are based on precise industrial expertise, combining the performance of our partners and respect for the product.

Each step is optimized to preserve the texture, color, and authentic taste of the French potato.

Step 1

Skin (On / Off)

The first step is to decide whether the skin is retained.

  • Keeping the skin: reduced waste, authentic taste, rustic appearance.

  • Without the skin: more uniform appearance and smoother texture.

Cut (Hydraulic / Mechanical)

Two types of cut are distinguished, ensuring the same efficiency:

  • Hydraulic Cut: minimized waste, wide variety of possible shapes.

  • Mechanical Cut: precise cutting for more complex shapes.

Coating (Light / Thick / French Flavors)

The coating gives the fry its crispness and its ability to hold over time.

Light Coating

  • Golden, crispy, natural taste.

  • Extended heat retention.

  • Possible without skin.

Thick Coating

  • More intense taste (butter, duck fat, etc.).

  • Exceptional crispness and long-lasting hold.

Flavor Coatings

Step 4

Preservation

Thanks to cooling tunnel and deep-freezing technology, Marianne controls preservation conditions according to needs:

  • Bi-temperature: frozen transport, consumption at +3°C.

  • Fresh Pre-cooked: no deep-freezing, for an enhanced taste and a more authentic texture.

This process guarantees the product’s freshness, stability, and versatility throughout the supply chain.
